This is my go-to when we want cookies. 🙂 This recipe was contributed by Doreen Fish over on Just A Pinch Recipes.
Makes about two dozen cookies.
4 large eggs
3/4 c plus 1 Tbs sugar
1/2 tsp vanilla [I use 1 tsp, because I’m a vanilla fan]
1/4 tsp salt
1/2 c melted butter [I use coconut oil]
3/4 c sifted coconut flour
1 Tbs sugar
2 tsp cinnamon
1. Combine eggs, sugar, vanilla and butter (or oil). Mix well. Stir in coconut flour. Let mixture rest for 5 mins to allow it to thicken.
2. Combine cinnamon with the reserved 1 tbsp of sugar. Form dough into 1 1/2 inch balls and roll in cinnamon mixture, coating thoroughly. Place on cookie sheet 1 inch apart. Flatten. Bake at 375 for 15 minutes. Cool.
I usually line my cookie sheet with parchment paper, then lift it off and slide the cookies onto a cooling rack between batches. If you’re using more than one cookie sheet, you can skip that “between batches” part. 😉
